Dutch Cheese, From Young to Aged

When visiting the Netherlands, you quickly realize that Dutch cheese is more than a tourist attraction. Rows of cheese line markets, specialty shops and tasting rooms through cities like Amsterdam. And the cheese varies from pale and mild to deeply colored and intensely flavored aged cheese. While these cheese all start with almost identical ingredients, they develop different textures and flavors over time. 


The transformation of fresh cheese to a fully aged wheel is a result of microbiology and chemistry. 


Cheesemaking has been an important part of Dutch agriculture for centuries. The Netherlands’ grasslands created ideal conditions for the dairy industry, and cheesemaking provided a practical way to preserve nutrients before refrigeration existed. 


One of the most famous Dutch cheeses is Gouda, named after the city where farmers used to trade cheese. Although Gouda is often considered a single cheese, it can range from young and mild to aged and complex, depending on how long it matures. 


Cheese production starts with milk, bacterial cultures, and enzymes such as rennet. The bacteria consume lactose and convert it to lactic acid. This process serves several purposes. The increasing acidity helps preserve the cheese, influencing flavor and texture while keeping away harmful microorganisms. 


Once the milk coagulates into curds and whey, the curds are pressed into molds and prepared for aging. While the cheese may appear finished, the really important steps are just beginning. One of the most significant processes during aging is proteolysis, the breaking down of proteins. Milk proteins, especially casein, slowly break into smaller amino acids. These contribute directly to flavor and serve as building blocks for additional aroma compounds.


Young Gouda cheese tends to have a mild, creamy flavor because relatively little protein breakdown has happened. As aging progresses, more protein breaks down leading to more flavor compounds to develop. This helps create the nutty, savory and sometimes even caramel-like notes associated with older cheese. This is one reason why aged cheese taste more complex than younger ones. 



A second process involves breaking down milk fats, a process called lipolysis. As fats decompose into smaller fatty acids, they add additional flavors and aromas. Depending on the specific compounds produced, lipolysis can create buttery, nutty, fruity, or even spicy flavor notes. 


During the aging process, flavor isn’t the only characteristic that changes. Texture evolves as well. Over time, moisture leaves the cheese. As the water content decreases, the cheese becomes firmer and denser. The moisture loss also concentrates the flavors, making aged cheese taste more intense. 


Temperature and humidity must be carefully monitored during the aging process because both influence moisture loss and microbial activity. Too mush can encourage spoilage whereas too little will negatively affect flavor and texture. 


Something else in Dutch cheese in small white crystals that are often mistaken for salt. These are actually amino acids, specifically tyrosine, which form as proteins break down during aging. The presence of these crystals is often considered a sign of well-aged cheese. 


Dutch cheesemaking is rooted in centuries of agricultural tradition and science.


Next time you are at the store looking at the variety of Gouda, you will see not just cheese but the results of months (or years) of microbial and chemical change.
