A Note on German Gingerbread

Going to Germany over Christmas means getting very familiar with German gingerbread, also known as Lebkuchen.


It’s been a part of German culture for hundreds of years. Monks had access to imported spices and honey through trade routes and the ability to store ingredients for a long time, which is what this type of baked good needs. The recipes and techniques have been refined and passed down over the years, and a lot of what makes Lebkuchen distinct today (the honey, the spice blend, the aging process) comes straight out of practical choices bakers made hundreds of years ago, long before anyone understood the chemistry behind why those choices worked.


Traditional Lebkuchen uses potash, or potassium carbonate, instead of baking soda. Potash is a very alkaline compound that behaves very differently than baking soda, and it’s why it works so well in moist doughs, like those used for making gingerbread. Baking soda is usually paired with an acid to produce carbon dioxide which helps baked goods rise. Potash contributes to bread rising when it’s heated but it also raises the pH of the dough. A more alkaline dough more intensely promotes Maillard reactions, which influences the dough texture, color, and flavor.


Traditional Ledkuchen can be stored for weeks or longer, and the texture can improve over that time. This is largely due to the honey that is part of the recipe. Honey is made mostly of fructose and glucose, which binds tightly to water molecules. So while a normal cookie dries out over time, lebkuchen pulls moisture in and stays soft. 



Lebkuchen usually contains a whole lineup of spices: cinnamon, cloves, cardamom, anise, nutmeg, ginger, and sometimes others. Each spice has many compounds that contribute to its aroma and flavor. For example, cinnamaldehyde is a major contributor to cinnamon's characteristic aroma, while eugenol contributes strongly to the aroma of cloves.


These aromatic compounds reach our nose and enhance the experience of eating lebkuchen. 


Sometimes traditional lebkuchen is baked on top of an edible wafer called oblaten. The wafer provides a surface for the sticky dough to sit on when it’s shaped and baked. It doesn’t have any flavor of its own but helps control how moisture moves around while the bread bakes.


The interesting thing about Lebkuchen isn't just that an old German cookie happens to taste good. It's that traditional bakers were solving real food science problems without having the scientific vocabulary we use today.
