Why Does Korean Buldak Ramen Keep You Coming Back?

Buldak ramen—“the world’s spiciest ramen” on Youtube—is a super spicy instant noodle brand from Korea. Even though it causes physical pain to eat, people keep coming back. So what makes this ramen so addictive?


The first notable aspect of Buldak is just how spicy it is. In line with the Korean culture of maepbusim, “spice pride,” the noodles are eye-wateringly hot. While Koreans appreciate the spiciness as a test of their pain tolerance, there’s another reason for the appeal: capsaicin.


Capsaicin is a component of chili peppers that causes pain sensations, leading to the release of endorphins and dopamine in a similar way to exercise. These neurochemicals create a euphoric feeling that decreases stress and also adds to the triumph of pushing past the pain of eating. Interestingly, capsaicin has been associated with higher metabolism and reduced inflammation. This is because it binds to TRPV1 receptors, promoting heat generation in the body and leading to a slightly higher energy expenditure. Its interaction also suppresses inflammatory pathways.

But Buldak ramen isn’t only spicy—it’s also sweet, a little sour, and umami. The last comes from the addition of MSG, a condiment made by fermenting glucose to produce a salt of sodium and glutamic acid. In combination with the signature spice, Buldak offers a unique sensory experience.


Lastly, their noodles are air-dried, not fried, and higher in gluten than other brands, lending a bouncy mouthfeel that lasts long after preparation. This texture is the cherry-on-top that makes Buldak truly addictive!
